Handroasting is a time-consuming and therefore more expensive roasting method. The raw coffee is roasted at 120-200 degrees for up to 20 minutes. The experience of the roasting master is decisive for the quality. The roaster heats the beans to 200 to a maximum of 230°C, which takes about 12 to 20 minutes to roast. Due to the long roasting time, chlorogenic acid and bitter substances are broken down. This makes the coffee particularly digestible (there is no heartburn as with most coffees!!!). In addition, the bean has enough time to form its own aroma complexes, which ensure a balanced taste.
